Banana & Almond Butter Chocolate Chip Cookies

These banana & almond butter chocolate chip cookies are a healthy and light summertime snack or fuel before a morning work out or a weekend hike.  Only sweetened with banana, they are also vegan and gluten free (flour free even). These could be made nut free as well by substituting sunflower butter for the almond butter! They are also extremely easy and quick to make (insert dancing lady in red dress emoji).  Full Post >


Strawberry Chia Jam

The strawberry. One of my faves and the quintessential fruit of summer. It’s hard to say if there’s anything better than a perfectly sweet, in-season California strawberry (only a perfectly ripe, in-season California avocado comes to mind). A few weeks ago, I found myself with an abundance of strawberries due to recipe testing a strawberry cobbler recipe for (vegan) Chef Christina Martin‘s new dessert ebook (which will be coming out soon!) This was my first time signing up to be a recipe tester and I chose that recipe in particular because it is kind of the perfect spring/summer dessert.  When I first moved to San Diego 3 years ago, I went to the Hillcrest Farmer’s market, picked up some strawberries, and I’ve been obsessed ever since. The only downside is that you have to use them up quickly or at least get them chopped and stored in the fridge basically the same day you buy them. Full Post >
